Veg Poha With Sprouts

Ingredients: 1 cup flattened rice (poha) 1/2 cup mixed sprouts (such as mung bean sprouts) 1 small onion, finely chopped 1 small tomato, chopped 1 green chili, chopped (adjust to taste) 1/2 teaspoon turmeric powder 1/2 teaspoon mustard seeds 1/2 teaspoon cumin seeds A pinch of asafoetida (hing) 8-10 curry leaves 2 tablespoons oil Salt, to taste Fresh cilantro leaves, chopped, for garnishing Lemon wedges, for serving

Flattened rice (poha)

Mixed sprouts (moong and matki, boiled)

1/2 cup

Small onion, finely chopped

Preparation

1. Rinse the poha under cold water in a sieve. Let it drain while you prepare the other ingredients.

2. In a pan, sauté the chopped onion, green chili, and mixed sprouts for a few minutes until slightly softened.

3. Add turmeric powder and mix well.

4. Add chopped tomato and cook until softened.

5. Fluff the drained poha with your hands and add it to the pan.

6. Gently mix everything together and let it cook for a couple of minutes.

7. Add salt to taste and mix again.

8. Turn off the heat, cover the pan, and let it sit for a few minutes.

9. Garnish with chopped cilantro leaves.

10. Serve the Veg Poha with sprouts hot, along with lemon wedges for squeezing over the top.
