Chicken Curry - Low Calories

Chicken curry & rice is one of the most comforting meals 😋 This is a very simple recipe with ingredients you probably already have in your kitchen, give it a try and let me know if you like it 🫶🏻 Recipe- (makes 4 servings) Macros (per serving) 332cal 66P | 4F | 8C (can vary depending on what chicken pieces are used) Chicken marinade- 1kg chicken with bone 2 tsp ginger garlic chili paste 1/2 tsp turmeric powder 1/2 tsp red chilli powder 1 tsp salt Marinate for 30 mins. For curry- 1 tbsp ghee Whole spices- 2 elaichi, 4 clove, 4 black peppercorn, 1 piece cinnamon, 1 bay leaf, 1 black cardamom 3 medium onion- finely chopped 3 medium tomato- pureed 2 tsp ginger garlic chili paste Spices- 1 tbsp coriander powder, 1 tsp haldi, 1/2 tsp red chilli powder, 1/2 tsp Kashmiri chili powder, 1 tsp chicken masala 1 cup water 1 tsp garam masala 1 tsp kasuri methi 2 tsp coriander leaves

Preparation

1. Heat ghee, sauté the whole spices on low flame till they get fragrant.

2. Cook onions & ginger garlic paste till its golden brown. If it is sticking to the pan keep adding little amounts of water to release it.

3. Add the tomato purée & cook till the water has evaporated. Add the spices & cook the masala well for 6-8 mins.

4. Add the marinated chicken, mix well & cook on low flame for 5-6 mins, till the chicken turns pale.

5. Add the water & let it come to a boil, cover the lid & let it cook on low flame for 15-20 mins. (Alternatively, you can pressure cook this for one whistle)

6. In the end, add the garam masala & kasuri methi. Mix well & cook for a minute.

7. Turn off the flame, top with coriander leaves & enjoy!!!
