Maharashtrian Pithla

Besan (Gram Flour)

Preparation
1. In a mixing bowl, add Besan and water. Mix well to make a smooth batter without any lumps. Keep aside.
2. Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
3. Add chopped onion and green chili. Sauté until the onion becomes translucent.
4. Add turmeric powder, red chili powder, coriander powder, garam masala powder, and salt. Mix well and cook for a minute.
5. Pour the Besan batter into the pan. Mix well with the masala.
6. Cook on low flame for 4-5 minutes, stirring continuously. The mixture will thicken and form a lumpy consistency.
7. Garnish with coriander leaves and serve hot with rice or roti.
