Tamarind Rice

Preparation
1. Heat the vegetable oil in a pan over medium heat. Add the peanuts and sauté for 1-2 minutes, or until they turn golden brown.
2. Add the cumin seeds and mustard seeds to the pan and sauté for another 1-2 minutes, or until they begin to splutter.
3. Add the tamarind paste to the pan and stir well to combine.
4. Add the turmeric powder, red chili powder, coriander powder, and salt to the pan and mix well.
5. Add the cooked rice to the pan and mix well to coat the rice with the tamarind mixture.
6. Garnish the tamarind rice with curry leaves (optional) and serve hot.
