Mix Vegetable Stew

Ingredients: 1 cup mixed vegetables (carrots, peas, potatoes, beans), chopped 1 onion, finely chopped 1 tomato, chopped 1/2 cup thick coconut milk 1/2 teaspoon turmeric powder 1/2 teaspoon cumin powder 1/2 teaspoon coriander powder 1/4 teaspoon red chili powder (adjust to taste) 2-3 green chilies, slit (optional, adjust to spice preference) 2 cloves of garlic, minced 1/2 inch ginger, grated 2 tablespoons oil A few curry leaves Salt to taste Fresh coriander leaves for garnishing

Preparation

1. Heat oil in a pot over medium heat.

2. Add the chopped onion and sauté until it becomes translucent.

3. Add the minced garlic and grated ginger. Sauté for another minute until fragrant.

4. Add the chopped tomatoes and cook until they become soft and mushy.

5. Add the mixed vegetables to the pot. Mix well with the spices and cook for a few minutes.

6. Pour in the thick coconut milk and mix it with the vegetables. If using green chilies, add them at this stage.

7. Add salt to taste and a few curry leaves for extra flavor. Mix everything together.

8. Cover the pot and let the stew simmer on low heat until the vegetables are tender. This will take about 15-20 minutes.

9. Once the vegetables are cooked and the flavors have melded, taste the stew and adjust the seasoning if needed.

10. Serve the mixed vegetable coconut stew hot, garnished with fresh coriander leaves.
