Egg Bhurji

Preparation

1. Break the eggs into a bowl and beat them well with a fork.

2. Heat oil in a pan and add the cumin seeds. Let them splutter.

3. Add the finely chopped onions and green chili (if using) to the pan and cook until they are soft and translucent.

4. Add the finely chopped tomatoes to the pan and cook until they are soft and mushy.

5. Add the turmeric powder, red chili powder, and salt to the pan and mix well.

6. Pour the beaten eggs into the pan and stir continuously with a spatula until they are cooked and scrambled.

7. Cook the egg bhurji on medium heat for 3-4 minutes or until the eggs are fully cooked and lightly browned.

8. Garnish with chopped coriander leaves and serve hot with bread or roti.
