Preparation
1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
2. Add chopped onions and sauté until they turn translucent.
3. Add ginger paste and garlic paste, and sauté for a minute.
4. Add chopped tomatoes, coriander powder, turmeric powder, red chili powder, and salt.
5. Add chopped potato and eggplant. Mix well and cook for 2-3 minutes.
6. Add water, cover the pan and cook for 8-10 minutes or until the potato and eggplant are cooked through.
7. Once the vegetables are cooked, remove the lid and cook for another 2-3 minutes or until the water has evaporated and the vegetables are coated with the spices.
8. Garnish with chopped coriander leaves (optional) and serve hot with roti, naan, or rice.
