Bhindi Masala - Gravy

Makes one serving Ingredients 1 cup bhindi (okra), chopped into small pieces 1 small onion, finely chopped 1 small tomato, finely chopped 1/2 teaspoon cumin seeds 1/2 teaspoon coriander powder 1/4 teaspoon turmeric powder 1/4 teaspoon red chili powder (optional) 1/4 teaspoon garam masala powder Salt to taste 2 tablespoons oil 1/2 cup water 1 tablespoon chopped coriander leaves for garnish

Ingredients for this Recipe

Bhindi (okra), chopped into small pieces

Coriander seed powder

Red chili powder (optional)

Preparation

1. Heat a non-stick pan over medium heat. Add oil and chopped bhindi. Fry the bhindi for 5-7 minutes until it turns slightly brown. Keep it aside.

2. In the same pan, heat oil over medium heat. Add the cumin seeds and let them splutter.

3. Add chopped onion and sauté for 2-3 minutes until it turns translucent.

4. Add chopped tomato and sauté for another 2-3 minutes until it turns soft.

5. Add coriander powder, turmeric powder, red chili powder (if using), and salt. Mix well to combine all the ingredients.

6. Add fried bhindi and mix well with the masala. Cook for 2-3 minutes.

7. Add water and bring it to a boil. Reduce the heat to low and let it simmer for 5-7 minutes until the gravy thickens.

8. Add garam masala powder and mix well. Cook for another minute.

9. Remove from heat and garnish with chopped coriander leaves.
