Soya Biryani

I make this recipe almost every week and it tastes so yummy with some green chutney and raita🥹 it’s perfect for dinner + vegetarian! Recipe (makes 3 servings) 🍛 for soya chunks- mix together - 150g greek yogurt - 1 tsp ginger garlic paste - spices (1 tsp each of haldi, garam masala, lal mirch powder, coriander powder, biryani masala) - 1 tsp salt - 80g raw soya chunks (soak in hot water for 10 mins and wash 2-3 times; squeeze out all water) - 40g beans - 40g carrot 🍛 for biryani- - 8g ghee(2tsp) - whole spices (1/2 tsp jeera, 2 elaichi, 4-6 kali mirch, 1 badi elaichi, 1 stick cinnamon, 1 bay leaf, 2-3 clove, 1 star anise) - 2 split chillies - 90g sliced onion - 2 tsp ginger garlic paste - 30g chopped tomato - 140g rice (washed and soaked in water) - 1 + 1/4 cup water - chopped coriander leaves - air fried onion (30-40g)

Preparation

1. heat the ghee and add the whole spices, cook for 1-2 mins till they’re aromatic

2. add the onion, chillies and ginger garlic paste, cook till it turns golden brown, then add the tomatoes and cook for 5-6 mins

3. add the marinated soya chunks, cook for 5-6 mins

4. add the rice, water, coriander leaves and air fried onion, sprinkle some biryani masala

5. cover and cook for 15-18 mins on a medium high flame

6. serve when its done, enjoyy🥰🍛
