Spinach Soup

Ingredients for this Recipe

Fresh spinach, washed and chopped

Vegetable broth or water

1/2 cup

Garlic clove, crushed

1/2 tsp

Small onion, chopped

Olive oil or any other oil

Salt and pepper to taste

Preparation

1. Heat the olive oil in a small pot over medium heat. Add the minced garlic and chopped onion and sauté for 2-3 minutes, or until the onion is translucent.

2. Add the chopped spinach to the pot and sauté for another 2-3 minutes, or until the spinach has wilted.

3. Pour the vegetable broth or water into the pot and bring it to a boil.

4. Reduce the heat and let the soup simmer for 5-7 minutes, or until the spinach is fully cooked.

5. Season the soup with salt and pepper to taste.

6. Transfer the soup to a blender and blend until it reaches a smooth and creamy consistency.

7. Pour the soup back into the pot and reheat if necessary.

8. Serve the spinach soup hot with a piece of bread
