Makes one serving 1/2 cup soaked and boiled kidney beans 1/4 cup tomatoes, chopped 1/4 cup cucumber, chopped 1/4 cup onion, chopped 1 tablespoon lemon juice 1 tablespoon olive oil 1/4 teaspoon cumin powder Salt and black pepper to taste 1 tablespoon chopped cilantro leaves

Preparation
1. In a mixing bowl, combine kidney beans, tomatoes, cucumber, and onion.
2. In a small bowl, whisk together lemon juice, olive oil, cumin powder, salt, and black pepper
3. Pour the dressing over the salad and toss to coat all the ingredients evenly.
4. Add chopped cilantro leaves to the salad and toss again.
5. Serve the Kidney Bean Salad immediately or chill it in the refrigerator before serving.
