Matki Sabzi

Preparation

1. Heat oil in a pan over medium heat.

2. Add cumin seeds and let them splutter.

3. Add the finely chopped onion and sauté until translucent.

4. Stir in the chopped tomato and cook until it becomes soft and the oil starts to separate.

5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.

6. Add the sprouted matki and give it a good stir to combine with the spices.

7. Cover the pan and let the sabzi cook on medium-low heat for about 10-15 minutes, stirring occasionally. The moong matki should become tender.

8. If the sabzi appears dry, you can sprinkle a little water to prevent sticking.

9. Once the matki is cooked and the flavors have melded, turn off the heat.

10. Garnish with chopped cilantro before serving.
