Vegetable Thai Rice

Makes one serving Ingredients: 1/2 cup cooked white rice 1/4 cup mixed vegetables, chopped (such as bell peppers, carrots, and onions) 1/2 tablespoon vegetable oil 1 garlic clove, minced 1/2 tablespoon red curry paste Salt and black pepper, to taste Fresh cilantro leaves, for garnish

Cooked rice

1/2 cup

Mixed vegetables, chopped (such as bell peppers, carrots, and onions)

1/4 cup

Oil

1/2 tbsp

Crushed garlic

1/4 tsp

Red thai curry paste

1/2 tbsp

Salt and pepper to taste

Fresh cilantro to garnish

Preparation

1. Heat the vegetable oil in a pan over medium heat.

2. Add the minced garlic and red curry paste to the pan and sauté for 1-2 minutes or until fragrant.

3. Add the mixed vegetables to the pan and stir fry for 2-3 minutes or until they are tender.

4. Add the cooked white rice to the pan and stir fry for another 2-3 minutes to coat the rice with the curry paste.

5. Season with salt and black pepper to taste.

6. Remove the pan from heat and transfer the Thai rice to a serving dish.

7. Garnish with fresh cilantro leaves and serve hot.
