Mix Vegetable Korma

Makes one serving Ingredients: 1/2 cup mixed vegetables (carrots, beans, potatoes, peas, etc.), chopped 1/4 onion, finely chopped 1 garlic clove, minced 1/2 inch ginger, minced 1/2 tomato, finely chopped 1/4 tsp cumin seeds 1/4 tsp coriander powder 1/4 tsp turmeric powder 1/4 tsp red chili powder 1/4 cup coconut milk Salt to taste 1 tbsp oil Fresh coriander leaves for garnish

Mixed vegetables

Small tomato, chopped

Ginger, chooped

1/2 tsp

Garlic, chopped

1/2 tsp

Cumin seeds

Coriander cumin seed powder

1/2 tsp

Turmeric powder

1/4 tsp

Red chilli powder

1/4 tsp

Coconut milk

Preparation

1. Heat oil in a pan over medium heat.

2. Add cumin seeds and let them sizzle for a few seconds.

3. Add chopped onion, minced garlic, and minced ginger. Sauté until the onion turns golden brown.

4. Add chopped tomato and cook until it becomes soft and mushy.

5. Add chopped mixed vegetables, coriander powder, turmeric powder, and red chili powder. Mix well.

6. Add salt to taste and mix again.

7. Add 1/4 cup of water and let the vegetables cook for 8-10 minutes or until they are tender. Add coconut milk and mix well.

8. Let the kurma cook for another 2-3 minutes.

9. Garnish with fresh coriander leaves and serve hot with rice, roti.
