Preparation
1. In a bowl, mix together the mashed beetroot, cooked quinoa, bread crumbs, garlic powder, paprika, salt, and pepper until well combined.
2. Shape the mixture into a patty of desired size.
3. Heat oil in a pan over medium-high heat. Once hot, add the patty and cook for 3-4 minutes on each side until it turns slightly brown.
4. Toast the burger bun until lightly browned.
5. Assemble the burger by placing the lettuce leaf on the bottom bun, followed by the cooked beetroot patty, tomato slices, onion slices, and ketchup
6. Cover with the top bun and serve hot.
