Ragi (finger millet) flour

Rice flour
1/4 cup
Small onion, chopped

Preparation
1. In a mixing bowl, combine the ragi flour, rice flour, chopped onion, green chilli, cumin seeds, and salt.
2. Slowly add water and mix until you get a smooth batter. The batter should be pourable but not too thin.
3. Heat a non-stick pan or a cast-iron skillet over medium heat. Grease the pan with a few drops of oil.
4. Pour a ladleful of the batter onto the hot pan and spread it evenly to form a thin dosa.
5. Cook the dosa on medium heat for 1-2 minutes until the bottom is golden brown and crisp.
6. Flip the dosa over and cook the other side for another minute.
7. Serve hot with chutney or sambar.
