Bhindi Masala - Dry
Makes one serving Ingredients: 1/2 cup bhindi (okra), chopped into small pieces 1 small onion, finely chopped 1 small tomato, finely chopped 1/2 teaspoon cumin seeds 1/2 teaspoon coriander powder 1/4 teaspoon turmeric powder 1/4 teaspoon red chili powder (optional) Salt to taste 1 tablespoon oil

Bhindi, washed and chopped

Onion, chopped
2 tbsp
Tomato, chopped
4 tbsp
Cumin seeds

Coriander seed powder

Preparation
1. Heat a non-stick pan over medium heat. Add the chopped bhindi and dry roast it for 5-7 minutes until it turns slightly brown. Keep it aside.
2. In the same pan, heat oil over medium heat. Add the cumin seeds and let them splutter.
3. Add chopped onion and sauté for 2-3 minutes until it turns translucent.
4. Add chopped tomato and sauté for another 2-3 minutes until it turns soft.
5. Add coriander powder, turmeric powder, red chili powder (if using), and salt. Mix well to combine all the ingredients.
6. Add the roasted bhindi and mix well with the masala. Cook for another 2-3 minutes until the bhindi is coated well with the masala.
7. Remove from heat and serve hot with roti or rice.
